Pistachio Dessert

Every year my mother will make this dessert at Christmas time. It is something I have come to associate with the holiday.


1/2 cup butter
1 cup flour
1/2 cup walnuts
8 oz pkg of cream cheese
1 cup powdered sugar
1 container Cool Whip
3 small packages instant Pistachio Pudding
3 cups milk

To make crust, cut butter into flour, add walnuts. Pat into a 9 x 13 pan. Bake at 400F for 12 minutes (just before it becomes golden brown); cool.

To make filling, mix cream cheese, powdered sugar, and 1 cup cool whip together and spread carefully over cooled crust.

To make pudding, mix pudding and milk together and pour over cream cheese layer. Top with more Cool Whip. Just before serving, garnish with chopped nuts. Cut into squares and serve
