Frozen Yogurt

I found this recipe in "The Perfect Scoop" from David Leibowitz. If you are an ice cream lover you have to buy this book! This frozen yogurt is tart and good. Best of all it is homemade so you can have it anytime! It is really good with fresh fruit on top! Some say it tastes a lot like Pinkberry.

In this recipe I use greek yogurt. For those not eating greek yogurt yet, go buy some now! It is thicker and richer than regular yogurt plus it has way more protein in it. It is awesome with honey and almonds or chopped fruit and granola. If you find greek yogurt too thick for your taste, you can thin it with some milk.



3 cups Greek-Style yogurt
3/4 cup Sugar
1 teaspoon Vanilla Extract

Mix together the yogurt, sugar, and vanilla. Stir together the sugar until completely dissolved. Refrigerate for one hour (or longer). Place in an ice cream maker and churn according to manufacturers instructions.

I have used both fat free greek yogurt and whole fat greek yogurt. I think the fat free is just as good. I do recommend eating this right from the ice cream maker, it has more of a soft-serve texture. If you put it in the freezer it gets too hard; even if thawed slightly the texture is not as good. You can put it in the freezer for an hour or so following churning but I promise it is way better if you don't let it freeze solid.
