Fresh Tomato and Basil with Pasta

This is great for an easy pasta dish. The tomatoes and basil add a really fresh taste. Great in the summer with ingredients from your garden or in the winter to remind you of days to come.



13 oz Spaghetti
5 tblsn Extra Virgin Olive Oil
5 cloves Garlic, thinly sliced
6 Vine-Ripened Tomatoes, seeded and chopped
3/4 cup torn Fresh Basil Leaves
Grated Parmesan

Bring a large saucepan of water to a boil, add salt, then add the pasta and cook until al dente. Drain the pasta.

While the pasta is cooking, heat 4 tablespoons of the oil in a frying pan and cook the garlic over low heat for 1 minute. As soon as the garlic begins to change color, remove the pan from the heat and add the remaining oil (if you don't want the garlic pieces mixed in with the pasta remove them now).
Add the pasta, tomatoes, and basil to the saucepan and toss. Season generously with salt and pepper. Top with grated Parmesan cheese.
