Oatmeal Date Nut Cookies

One of the dietitians that I work with makes these cookies. They are full of really good ingredients that make them really great and chewy!


1 cup unsalted butter
1 1/2 cups firmly packed brown sugar
1/4 cup honey
2 eggs
1 tsp vanilla
1 1/2 cups flour
1 tblspn cinnamon
1 tsp salt
4 cups oatmeal (not quick oats)
3/4 cup dates, chopped into raisin-sized morsels
3/4 cup raisins
1 1/2 cups pecans

Preheat oven to 350. Cream butter, sugar, and honey in a mixer. Add egg and vanilla. Combine flour, cinnamon, and salt and mix with the butter mixture just until combined. In a separate bowl, combine oatmeal, dates, raisins, and pecans. Stir together and add to dough.

Spoon 2" balls onto baking sheet, flatten. Bake for 10-15 minutes until lightly browned. Makes about 2 dozen.
