This recipe is an adaptation from my step-father's. It is a really great and easy lasagna!
1 lb Italian Sausage
1 clove minced garlic
1 small onion, diced
1-15 oz can diced tomatoes
1 Tablespoon dried Italian seasoning
1-25 oz jar of marinara pasta sauce
1 10-oz package of lasagna noodles (the wavy kind)
2 cups shredded mozzarella cheese
2 cups low fat ricotta cheese
1 beaten egg
1/2 cup Shredded Parmesan cheese
1 Tablespoon dried parsley flakes
In a skillet, combine Italian sausage, garlic, and onion. Cook until brown. Drain off fat. Add can of tomatoes and Italian seasoning. Mix together thoroughly and simmer, uncovered, about 15 minutes, stirring occasionally.
In the meantime, boil lasagna noodles as directed on package.
While the meat mixture and noodles are cooking, mix ricotta cheese in a bowl with beaten egg, Parmesan cheese, and dried parsley flakes.
Using a 9x13 baking dish layer:
1/3 of Sauce
3-4 cooked lasagna noodles
Ricotta cheese mixture
Noodles
1/3 of Sauce
Meat mixture
Noodles
1/3 of Sauce
Mozzarella cheese
Bake in a 350-degree oven for 45 minutes, until hot and bubbly. (You could also cover and freeze it, unbaked)
